Stir all ingredients but the champagne and strain into an old fashioned glass. Top up with the champagne and add garnish.

40ml Gin
30ml Sweet Vermouth
Orange Twist (for Garnish)

Stir and strain ingredients into an old fashioned glass. Add garnish.

Amuse 1

15ml Galliano
40ml Vodka
25ml Dry Vermouth
Cucumber Skin (for Garnish)

Stir ingredients and strain into an old fashioned glass. Add garnish.

40ml Gin
15ml Fino Sherry
15ml Lemon Juice
10ml Sugar Syrup
2 Dashes of Angostura Bitters
Grapefruit Twist (for Garnish)

Shake and strain ingredients into a coupe glass. Add garnish.

Matalan Swizzle

30ml Mezcal Tequila
45ml Strawberry And Rosemary Purèe
15ml Lime Juice
Soda Water
Rosemary Sprig (for Garnish)

Build all ingredients but the soda water into an ice filled highball glass and stir. Top up the glass with the soda water and add garnish.

30ml Coffee Infused Mezcal Tequila
30ml Lime Juice
25ml Agave Syrup
10ml Apricot Brandy
1 Dash of Angostura Bitters
3 Coffee Beans (for Garnish)

Shake and strain ingredients into a cocktail glass.

Cuervo Espresso Martini

45ml Silver Tequila
15ml Coffee Liqueur
15ml Sugar Syrup
30ml Espresso
Coffee Beans (for Garnish)

Make the espresso and let it cool before shaking it with the rest of the ingredients and straining into a cocktail glass. Add garnish.
