20ml Lemon Juice
15ml Orgeat Syrup
1 Egg White
Soda Water
15ml Amaretto

Shake all ingredients but the soda water and amaretto and strain into a highball glass. Top up with the soda water and float the amaretto.

Hayes Fizz

5ml Absinthe
60ml Gin
20ml Simple Syrup
20ml Lemon Juice
60ml Soda Water
Orange Slice (for Garnish)
Maraschino Cherry (for Garnish)

Rinse a Collins glass with the absinthe, shake the remaining ingredients but the soda water and strain into the rinsed glass. Top up the glass with the soda water and add garnishes.

Grapefruit Collins

60ml Gin
20ml Lemon Juice
20ml Simple Syrup
30ml Grapefruit Juice
15ml Soda Water
Grapefruit Twist (for Garnish)

Shake all ingredients but the grapefruit juice and soda water and strain into an ice filled Collins glass. Top up with the grapefruit juice and soda water and add garnish.

60ml White Tequila
20ml Lime Juice
20ml Honey
1 Thick Jalapeño Slice
Soda Water

Shake all ingredients but the soda water and strain into an ice filled Collins glass. Top up the glass with the soda water.

Bicycle Thief

30ml Gin
30ml Campari
45ml Grapefruit Juice
15ml Lemon Juice
15ml Simple Syrup
Soda Water
Orange Slice (for Garnish)

Shake all ingredients but the soda water and strain into an ice filled highball glass. Top up the glass with the soda water and add garnish.

2 Thin Orange Slices

Shake ingredients vigorously and strain into a coupe glass.

Tequila Eastside

45ml Tequila
20ml Simple Syrup
30ml Lime Juice
6-8 Mint Leaves
2-3 Thin Cucumber Slices

Muddle the cucumber slices and mint leaves with simply syrup, add the remaining ingredients and shake vigorously. Strain into an ice filled old fashioned glass.
