Renaissance

45ml Aperol
10ml Gin
20ml Lemon Juice
20ml Rhubarb Syrup
1 Pinch of Himalayan Purple Salt
Champagne
Rhubarb Stick (for Garnish)

Shake all ingredients but the champagne and double strain into a wine glass. Top up with the champagne. Add garnish.
