Seapea Fizz
30ml Absinthe
30ml Lemon Juice
15ml Simple Syrup
1 Egg White
60ml Soda Water
Peppermint Leaf (for Garnish)
Shake all ingredients but the soda water vigorously and strain into a champagne flute. Top up with the soda water and add garnish.
