Dash of egg white (optional)

Put ingredients into shake with ice and shake well, if with egg white shake harder. Strain into cocktail glass, and garnish with half orange slice and marashcino cherry. If on the rocks strain into old fashioned glass.

Whiskey Sour was first developed to prevent scurvy amongst sailors in the 1700's by the British Navy as a method of preserving juice.

Sazerac

50ml Cognac
1ml Absinthe
1 Sugar Cube
2 dashes of Peychaud's Bitters

Rinse chilled old fashioned glass with absinthe, add crushed ice and set aside for later. Stir the sugar, cognac and Peychaud's bitters over ice cubes in a mixing glass. Discard the ice and excess absinthe in the old fashioned glass and strain the drink into it. Garnish with a lemon peel.

Sazerac was made in New Orleans in the 1850's and is referred to by some as the oldest American cocktail. Its origin lies from an establishment called the Sazerac Coffee House.

Brits in India consumed quinine in the form of "Indian tonic water" and added gin to rid of the bitter taste, creating the Gin And Tonic.

Tom Collins

40ml Gin
10ml Lemon Juice
Teapoon of Superfine/Caster Sugar
Soda Water

Fill glass 3/4 full with cracked ice. Proceed to fill the glass with gin, lemon juice and sugar, stirring the ingredients briefly. Top up with soda water and garnish with a lemon piece.

This cocktail appears in the mid 1870's book by Jerry Thomas titled Bon Vivant's companion. The drink itself was named after a non-existent man of the same name who talked harshly of others when he was at the bar, prompting many to try to find him to have a word with Tom. This became known as The Great Tom Collins Hoax of 1874 and the cocktail Tom Collins was made in honour of this, so when people asked for the man Tom Collins they got a cocktail instead of confronting a person.

A Sugar Cube
2 dashes of Angostura Bitters
A dash of water or soda water

Place sugar cube in glass, put two dashes of bitter and a dash of soda water in. Muddle until sugar is dissolved  Fill glass with ice and then whiskey. Add garnish of orange slice, lemon twist and two cherries.

One of the oldest cocktails that was referred to as a "whiskey cocktail" in the 19th century.

Bloody Mary

45ml Vodka
100ml Tomato Juice
20ml Lemon Juice
4 dashes of Worcestershire Sause
4 dashes of Tabasco Sause

Build ingredients over ice and stir well. Add a pinch of pepper and garnish with a celery stick.

It is said to be first made by Fernand Petiot in the early 1920's in Paris at Harry's New York Bar. Petoit later brought the drink to St. Regis Hotel in Manhattan, New York.

Mojito

60ml White Rum
20ml Lime Juice
Soda Water
2 tablespoons of sugar
3 Common Mint leaves

Put sugar, mint leaves and some soda water in glass and muddle well. Squeeze lime juice in and place half of lime in glass. Add rum and stir well. Put ice in and top up glass with soda water. Garnish with mint sprig and serve with straw.

The origins of the Mojito is from Cuba and is one of the oldest cocktails. The exact origin is uncertain, with slaves in Cuba during the 19th century being one idea where the Mojito came to be. Another story of its origins comes from Francis Drake, who tried to sack a place for gold and was unsuccessful.  After this unsuccessful sacking an associate made a Mojito like drink called El Draque.

Sage's Wisdom

45ml Scotch Whiskey
15ml Triple Sec
30ml Orange Juice
15ml Lime Juice
8 Garden Sage leaves

Shake ingredients together and strain drink into a chilled Martini glass. Garnish by placing an orange slice horizontally into glass.
