60ml Pineapple Juice

Shake all ingredients but the wine and bitters and strain into a champagne flute. Mix the wine and bitters and float on top of the drink.

Rocket To Platino

60ml Blanco Tequila
1 Tablespoon of Green Chartreuse
1 Tablespoon of Pink Grapefruit Juice
1 Tablespoon of Lime Juice

Soda Water

Tear the rocket and put it into the shaker along with all the other ingredients except the soda water, shake ingredients and strain into a highball glass. Top up the glass with soda water.

75ml Fino Sherry
5ml Sugar Syrup
Sparkling Wine
Berries (for Garnish)
Mint Sprig (for Garnish)
Icing Sugar (for Garnish)

Put the wedges and pineapple cube to a shaker and muddle them, add the sherry and sugar syrup and shake and strain into a wine glass. Top up the glass with sparkling wine and stir gently. Add garnishes in given order, dusting the icing sugar on the berries and mint sprig.
