Green Fairy

30ml Absinthe
5ml Water
5ml Simple Syrup
1 Dash of Angostura Bitters
1 Dash of Lemon Juice
1 Egg White
Mint Sprig (for Garnish)

Shake ingredients vigorously and strain into a cocktail glass. Add garnish.
