In highball glass, gently muddle the mint, sugar and water. Fill glass with cracked ice, add the bourbon and stir well until the glass is frost. Garnish with mint sprig.
It originated in southern USA in the 18th century and first referenced in the 1803 print of a book by John Davis.

The drink itself was named after a non-existent man of the same name who talked harshly of others when he was at the bar, prompting many to try to find him to have a word with Tom. This became known as The Great Tom Collins Hoax of 1874 and the cocktail Tom Collins was made in honour of this, so when people asked for the man Tom Collins they got a cocktail instead of confronting a person.
