60ml Grapefruit Juice
15ml Lime Juice
2 Bar Spoons of Vanilla Sugar
5ml Sugar Syrup
Mint
Egg White
Sanbitter
Grapefruit Zest for Garnish
Mint Sprig for Garnish

Shake and strain ingredients into a highball glass. Add the garnishes.

Helado De Jallsco

30ml Tequila Tromba Blanco
30ml Grand Marnier
5ml Agave Syrup
Juice from Half a Grapefruit
Scoop of Vanilla Ice Cream
Lemonade

Shake the tequila, Grand Marnier, agave syrup and juice. Add the ice cream to a sugar canister and double strain the shaker into canister and top up with lemonade.

45ml Tequila Tromba Blanco
10ml Plymouth Gin
10ml Juniper Infused Agave Syrup
20ml Lime Juice
Soda
30ml Wray & Nephew Rum

Dry shake, then shake and strain all ingredients but soda and rum into a flask. Top up with the soda and rum.

La Siesta

45ml Tequila
15ml Milk
3 Dashes of Peychaud's Bitters
30ml Pineapple Juice
30ml Orange Juice
15ml Homemade Falernum Syrup
10ml Pierre Ferrand Dry Curacao
Orange Slice for Garnish

Shake and strain into old fashioned glass. Add the garnish.

Blue Oaxacan

45ml Tequila Blu Reposado
15ml Blue Curacao
10ml Lime Juice
20ml Coconut Water
Dash of Rose Water
2 Bashed Cardamom Pods
Soda
30ml Wray & Nephrew Rum

Shake and strain all ingredients but the soda and rum, topping up the glass with the rum and soda.

Papillion

50ml Hussong Reposado
2 Bar spoons of Honey
2 Dashes of Bittermans Hopped Grapefruit Bitters
Mandarin Twist for Garnish

Stir and strain ingredients into a chilled coupette. Add the garnish.
