Port Au Prince

30ml Barbancourt 3-Star Rum
30ml El Dorado 3-Year Rum
10ml Lemon Hart 151 Rum
20ml Velvet Falernum
20ml Lime Juice
15ml Pineapple Juice
10ml Grenadine
1 Teaspoon of Ginger Syrup
6 Drops of Bittemens 'Elemakule Tiki Bitters
Pineapple Slice (for Garnish)

Shake ingredients and strain into a pilsner glass filled with crushed ice. Add garnish.

Jalapeño Margarita

4 Slices of a Jalapeño
10ml Agave Nectar
45ml Reposado Tequila
20ml Grand Marnier
20ml Lime Juice
2 Dashes of Orange Bitters
Jalapeño (for Garnish)

Muddle jalapeño with the nectar in a shaker, add the remaining ingredients, shake vigorously and strain into a cocktail glass. Add garnish.

Don Lockwood

1 Dash of Angostura Bitters
2 Dashes of Chocolate Bitters
15ml Maple Syrup
30ml Islay Scotch
30ml Bourbon
Orange Twist (for Garnish)

Build ingredients into an old fashioned glass and stir. Add garnish.

Strawberry Daiquiri

3-4 Strawberries
60ml White Rum
30ml Lime Juice
15ml Simple Syrup
Strawberry Slice (for Garnish)

Blend ingredients with ice and pour into a margarita glass. Add garnish.

Bellini

35ml Peach Juice
1 Dash of Chambord
Prosecco

Build the juice and Chambord into a champagne flute and gently stir. Top up with the Prosecco.

Leprechaun Dancer

60ml Irish Whiskey
15ml Lemon Juice
30ml Soda Water
30ml Dry Ginger Ale
Lemon Peel (for Garnish)

Build ingredients into an ice filled highball glass and add garnish.

Pink Lady

45ml Plymouth Gin
15ml Apple Brandy
20ml Lemon Juice
20ml Acacia Honey Syrup
10ml Grenadine
1 Egg White
3 Brandied Cherries on a cocktail pick (for Garnish)

Dry shake the ingredients, shake again with ice and double strain into a rocks glass. Add garnish.
