Plum And Lemon Thyme Apéno

60ml Fino Sherry
30ml Plum Purée
30ml Soda Water
2 Sprigs of Lemon Thyme

Build the sherry and purée into a wine glass and stir. Top up with the soda water and gently stir. Add garnish.
