Holland Fizz

60ml Genever
15ml Lemon Juice
10ml Simple Syrup
1 Egg White
60ml Sparkling Water
Lemon Twist (for Garnish)
Mint Sprig (for Garnish)

Dry shake all ingredients but the sparkling water, add ice and shake again. Build the sparkling water into a Collins glass and double strain from the shaker into the glass. Add garnishes.
