45ml Light Rum
45ml Port
15ml Lemon Juice
1 Teaspoon of Caster Sugar
1 Egg White
Soda Water

Shake all ingredients but the soda water with vigour and strain into an ice filled highball glass. Top up with the soda water.

60ml Light Rum
15ml Galliano
15ml Apricot Brandy
30ml Lime Juice
120ml Apple Juice
15ml Sugar Syrup
Lime Wedge (for Garnish)

Shake ingredients and strain into an ice filled highball glass. Add garnish.

Hummingbird

30ml Dark Rum
30ml Light Rum
30ml Southern Comfort
30ml Orange Juice
Cola
Orange Slice (for Garnish)

Shake all ingredients but the cola with crushed ice and strain into a tall glass. Top up with the cola and add garnish.

Ice Palace

45ml Light Rum
30ml Galliano
30ml Apricot Brandy
60ml Pineapple Juice
15ml Lemon Juice
Orange Slice (for Garnish)

Shake ingredients and strain into a Collins glass. Add garnish.

St. James

60ml Golden Rum
30ml Orange Juice
15ml Lime Juice
3 Drops of Angostura Bitters
60ml Tonic Water
Lime Slice (for Garnish)

Build ingredients into an ice filled highball glass and gently stir. Add garnish;

New Orleans Dandy

30ml Light Rum
15ml Peach Brandy
1 Dash of Orange Juice
1 Dash of Lime Juice
Champagne

Shake all ingredients but the champagne and strain into a champagne flute. Top up with the champagne.

30ml Apricot Brandy
2 Teaspoons of Lime Juice
