1 Egg White
90ml Absinthe
30ml Gin
Soda Water

Shake all ingredients but the soda water vigorously and strain into a wine glass. Top p with the soda water.

Mint Madre

5-6 Mint Leaves
4-5 Pineapple Cubes
2 Dashes of Orange Bitters
1 Dash of Agave Nectar
60ml Blanco Tequila
Maraschino Cherry (for Garnish)

Muddle the mint leaves, pineapple cubes, bitters and nectar in an old fashioned glass. Top up the glass with ice cubes and tequila, stir and add garnish.

120ml Rhubarb Syrup

Shake ingredients vigorously and strain into a coupe glass. Add garnish.

60ml Light Rum
30ml Dry Vermouth
30ml Orange Curaçao
1 Dash of Grenadine
Orange Twist (for Garnish)

Stir ingredients and strain into a coupe glass. Add garnish.

Bankers Punch

3 Dashes of Angostura Bitters
20ml Lime Juice
20ml Raspberry Cordial
20ml Red Wine
20ml Irish Whiskey
10ml Light Rum
10ml Dark Rum
10ml Gold Rum
Grated Nutmeg (for Garnish)
