May Day

15ml Plymouth Gin
15ml Aperol
15ml Lemon Juice
1 Teaspoon of Simple Syrup
3 Dashes of Rhubarb Bitters
Champagne

Stir all ingredients but the champagne and strain into a coupe glass. Top up with the champagne.
